I make these loaded Egg Bites with leftover roasted potatoes and leftover ground beef. They are great for breakfast or as a snack.

Ingredients

24 Bites
  1. 12eggs
  2. 1 1/2 cupsmilk
  3. 1 cupcottage cheese
  4. 2 Tbspavacado oil
  5. 3 cupsroasted potatoes chopped or frozen hash brown potatoes thawed
  6. 2.5 cupscooked ground beef with onions
  7. 1.5 cupsshredded cheese of choice
  8. 1 bunchgreen onions chopped
  9. Salt and pepper to taste

    Preheat oven to 350°.

    In a medium bowl or 4 cup Pyrex measuring cup, mix cottage cheese and milk with a hand mixer until cottage cheese is smooth.

    In a separate bowl, gently whisk eggs until blended. Avoid beating as it will add too much air to the eggs.

    Pour eggs into milk mix, add in salt and pepper to taste, and gently whisk to combine.

    Coat 2 x 12 muffin tins with avacado oil using a pastry brush or use silicone baking cups

    Divide potatoes evenly to cover each muffin bottom.

    Add a spoonful of ground meat to each.

  8. 8

    Cover with grated cheese and top with a sprinkle of scallions.

  9. 9

    Pour egg mixture into each cup (about 3 Tbsp) being careful not to overfill.

    Bake side by side in oven for 25-30 minutes until egg is firm. Remove and let cool 5 minutes before removing each bite.

    Enjoy warm with your favourite hot sauce.

    Leftover bites can be stored in the fridge in an airtight container for a few days, or frozen and removed as needed. Reheat in microwave.
