Veggies galore! 🥬 🫘

Beautifully roasted in-season cabbage on Caesar-ish beans topped with breadcrumbs fried in olive and Calabrian chili oil.

I saw this cheeky Caesar dressing that uses cottage cheese instead of egg + oil over at @mob had to try it. It’s delicious. And I think that makes it healthier?

Ingredients

  1. Cabbage
  2. 1 headgreen cabbage (hispi also works super well)
  3. Garlic powder
  4. Smoked Paprika
  5. Salt & Pepper
  6. Caesar Beans
  7. 1 cupcottage cheese
  8. 2 splashesWorcestershire sauce
  9. 1 tbspwhite wine vinegar (or lemon)
  10. 3anchovies filets
  11. 1 tbspcapers
  12. 2 canscannellini beans
  13. Spicy Breadcrumbs
  14. 1/2 cupunseasoned breadcrumbs
  15. Garlic powder
  16. 1/2 tbspCalabrian chili oil
  17. 1/2 tbspextra virgin olive oil
  18. Salt

Cooking Instructions

    Preheat the oven to 450 degrees with a sheet pan in it.

    Once up to temp, lightly oil and generously season the cabbage slices. Place it onto the preheated sheet pan and roast for about 40 minutes, flipping halfway through.

    To make the dressing combine all ingredients in a food processor or blender for about 40 seconds. Add water if it’s too stiff.

    Mix the dressing with drained cannellini or garbanzo beans. Optionally add thinly sliced chives.

  5. 5

    In a nonstick pan over medium high heat add the oils and breadcrumbs and salt. Toast until golden brown. Remove from the pan to stop the toasting process.

    To plate: beans at the bottom, then the charred cabbage slices, and then the breadcrumbs. Optionally a drizzle of nice evo to finish
