In the bowl of your mixer, cream your sugar and butter

Add your egg and lemon extract and mix until combined. Add your dry ingredients and fold with a spatula until smooth

Divide into two 2 inch mini cake tins. Pop into the oven at 180c for 25 minutes. Let them cool for 15 minutes then tightly wrap your cakes with cling film to keep the moisture in and allow them to cool completely on the side. pop them into the fridge overnight.

Melt your white chocolate in the microwave for 20 second intervals until melted and set aside to cool.

To make your icing, mix your butter in your mixer until it turns white then start to add your icing sugar until incorporated.

Add your white chocolate, lemon extract and mix until combined

Pop into a piping bag and pipe a border around your first cake layer, add your lemon curd in the middle or the filling you are using then place your second layer on top.

Cover the entire cakes with icing and smooth it over. Pop it into the fridge to set while you sort out your fondant. About 30 minutes

Roll out your fondant so it will fit around your cake. Roll it up with your rolling pin and slowly pop it over your cake.

Smooth down the fondant and use your fondant smoothers to go around the cake. Cut off any excess. (Mine didn't smooth out as much as I would have liked 😞)

I forgot to take a picture of this but I made a fondant hat for my little cake 😂 I also piped on some hair with my left over icing.

For the feet I moulded some black icing into oval shapes and popped a bit of white icing behind it so it looked like the feet were coming off of the cake, I then made some eyes and a mouth with my black fondant and popped them on. I think it looks cute 🥰 Enjoy 😍😍
