Looks so good! If we are not cucumber fans what would you suggest as a substitute?

If you don’t like cucumber but like the texture, you can swamp out with peppers. You can also do a quick seasonal medley and roast some squash, zucchini, and cauliflower in a separate pan when you crisp the rice. If you go that route I’d just make sure to remove the seeds so the veggies don’t get soggy!
