Quick, crispy Indian-inspired omelette with crushed papad for crunch and flavor — perfect for breakfast or a snack.
Steps

Lightly crush papads into small pieces.

Beat eggs in a bowl; add onions, tomato, chili, coriander, salt, and pepper. Mix well.

Heat oil in a non-stick pan over medium heat.

Pour half of the egg mixture into the pan, sprinkle half of the crushed papads on top. Cook 3–4 min until edges set.

Flip carefully and cook 2–3 min on the other side.

Repeat with remaining egg mixture for a second omelette.
Tips
Add papad just before cooking to maintain crispiness. Serve immediately with chutney or ketchup.
