I love making this recipe for my loved one.
It's healthy and cheeky at the same time.

Peel and cut the potatoes in thin slices.

Shallow fry in sunflower oil. Season with persillade. Until golden brown. Drain on a plate with kitchen towel. Cover with foil to keep it hot.

In a separate pan, put olive oil and finely chopped onion until it changes colour.

Slice the courgette and add to the onion, add persillade then cover with a lid. Turn occasionally.

Season the salmon fillets with mixed crushed peppercorns and herbes de Provence. Use the same pan as the potatoes and cook the salmon fillet skin down. Turn it on each side until cooked.
