Soak & Blend the Moong Dal
Wash the yellow moong dal thoroughly and soak it for a minimum of 2 hours.
Drain well in a colander.
Transfer to a blender and add ginger, turmeric powder and ¼ cup water. Blend to a smooth paste.
Add a little extra water only if required. Do not make the batter too thin, as the vegetables will release moisture.

Prepare the Batter
Transfer the moong dal paste to a large mixing bowl.
Add onion, green, yellow and red bell peppers, grated carrot, tomato, green chillies, curry leaves, coriander leaves, grated cheese, grated paneer, cumin seeds, chilli flakes and salt.
Mix well to form a thick, spreadable batter.

Add Fruit Salt
Just before making the pancakes, add ½ tsp fruit salt.
Mix gently until well combined. Avoid overmixing.

Cook the Pancakes
Heat a pan over medium heat.
Brush with about ½ teaspoon oil and sprinkle some roasted white sesame seeds over the hot pan.
Pour one large spoonful of batter and gently spread it into a thick pancake.
Sprinkle a few more sesame seeds on top.
Cover and cook on low flame for about 4 minutes.
Drizzle a few drops of oil over the top, then carefully flip.
Cover and cook for another 3 minutes, or until cooked through and golden.

Repeat with the remaining batter.
