Persian Khamse Angoor, also known as Khamse Pateh, is a traditional grape preserve from northern Iran, made simply by slowly cooking sweet seedless grapes in their own juice.

No sugar, no water, and no other ingredients are added. The grapes are cooked slowly until their natural juice completely evaporates, leaving a rich, concentrated grape preserve.

Its flavor depends entirely on the grapes, so be sure to use sweet grapes for the best result.

In northern Iran, Khamse Angoor is enjoyed with bread and is also used in traditional dishes such as fried eggs and stuffed fish. 🍇❤️

    Remove the grapes from the stems and wash them. Let the grapes drain well, then place them in a pot.

    Cover the pot with a lid and cook over low heat.

  3. 3

    The grapes will gradually release their own juice. Let them cook slowly over low heat until the liquid gradually evaporates. Stir occasionally.

    As the liquid reduces, stir more frequently to prevent the grapes from sticking and burning.

    Continue cooking until all the liquid has completely evaporated.

    Let the grape preserve cool completely. Transfer it to a clean jar with a lid and store it in the refrigerator.

Tips

The flavor of this preserve depends entirely on the flavor of the grapes. Do not use sour or sweet-and-sour grapes. Use only sweet grapes.
