Shahi Chhole Bhature prepared with garam masala

For this Chole Bhature recipe, I have used both whole spices and ground garam masala; this significantly enhances the flavor and aroma of the chole (chickpea curry). Adding a mix of whole wheat flour, all-purpose flour (maida), and semolina (suji) to the bhature dough not only improves the taste but also gives them an excellent texture.
Chole Bhature is a popular and delicious dish from North India. The combination of zesty, spice-rich chole and fluffy,golden-brown bhature is truly delightful. In this recipe, the chole are prepared using whole spices, onions, tomatoes, ginger, garlic, and a green chili paste, which imparts an authentic Punjabi flavor.

Steps
- 1
To prepare the chickpeas (chole), wash the Kabuli chana thoroughly and soak them in plenty of water for 8–10 hours or overnight. Afterward, drain the water and rinse the chickpeas once more. Place the chickpeas in a pressure cooker along with enough water, salt, a large cardamom, a small cardamom, cinnamon, cloves, and a bay leaf. Pressure cook for 4–5 whistles; the exact cooking time will depend on the chickpeas and the specific pressure cooker used. Remove the whole spices afterward.
- 2
Now, chop the ginger, garlic, green chilies, onions, and tomatoes, and grind them all together. (You may grind them separately if you prefer, but grinding them together does not affect the flavor and makes the process faster.)
- 3
Heat oil in a pressure cooker or a pan (kadhai) and add asafoetida (hing) and cumin seeds. Then, add the onion-tomato-ginger-garlic paste and sauté it. Cook the paste until the oil begins to separate. Next, add all the dry spices—such as turmeric powder, coriander powder, etc.—and sauté well for 1 to 2 minutes.
- 4
- 5
Now, add the boiled chickpeas along with some of the water in which they were boiled. Lightly mash a few of the chickpeas with a spoon to thicken the gravy, and add the garam masala.
- 6
Cook the chickpeas over low heat for 10–15 minutes. Finally, add the amchur (dried mango powder) and salt to taste. Garnish with fresh coriander leaves.
- 7
In a large bowl, combine the all-purpose flour (maida), yogurt, whole wheat flour, semolina (suji), oil, salt, sugar, and baking soda, and mix well. Then, proceed to knead the dough.
Gradually add lukewarm water while kneading until you achieve a soft and smooth dough. Ensure the dough is not too firm. Cover it and let it rest for 1 hour; this will make it easier to roll out. If the semolina is coarse, it is better to let the dough rest for a bit longer. - 8
Divide the dough into equal-sized portions (balls). Lightly coat them with oil and roll them out into round or oval-shaped bhatures. They should neither be too thick nor too thin.
- 9
Heat the oil well in a pan. Add a bhatura and press it lightly with a ladle so that it puffs up. Flip it over and fry the other side until golden brown. Then, remove it and set it aside. Fry all the bhaturas in the same way.

Tips
🍴 Be sure to use yogurt when making bhature; it helps keep them soft.
🍴Too much semolina (suji) can make the bhature tough, so ensure you use the right proportion.
🍴 Knead the dough for the bhature until it is soft and smooth.
🍴 Avoid using too much dry flour when rolling out the bhature; it is better to use a little oil instead.
