Suji Dhokla is a soft, fluffy, and delicious Gujarati snack made with semolina, curd, and a few basic spices. It is easy to prepare and tastes best with a flavorful mustard seed and curry leaf tempering.
Steps
- 1
In a bowl, mix suji, curd, and water. Rest for 10 minutes.
- 2
Add salt, crushed coriander and cumin seeds, and the ginger-chilli-garlic mixture. Add water as needed to make a smooth batter.
- 3
Grease a plate and prepare the steamer. Add Eno and a little water to the batter, mix quickly, and pour it into the plate. Sprinkle red chilli powder on top. Steam for 15 minutes or until cooked through.
- 4
For the tempering, heat oil in a pan. Add mustard seeds, cumin seeds, hing, curry leaves, and chopped green chillies. Let the dhokla cool slightly, cut into pieces, and pour the tempering over it. Serve fresh!
Tips
1) Add Eno just before steaming for soft and fluffy dhokla.
2) Avoid overmixing the batter after adding Eno.
3) Adjust the water to get a thick but pourable batter.
4) Serve with green chutney for extra flavour.
