Greek Easter Cookies (Koulourakia)

These cookies are crisp on the outside and soft on the inside. They’re the tastiest I’ve tried so far (this is Grandma Stella’s recipe).

Before baking, you can brush the tops with a little beaten egg to give them a shiny finish. I usually beat a whole egg with a little water in a bowl, then brush the cookies. You can use just egg, just yolk, just white, a little milk, or any combination you like. Or, of course, you can leave them plain.

Ingredients

Makes about 50 cookies
  • 2 cupssugar (about 400 grams)
  • 4eggs
  • 1 cup (2 sticks)unsalted butter (250 grams)
  • 1/2 cupmilk (120 ml)
  • 1/2 cuporange juice (120 ml)
  • Zest of 1 orange
  • 8 cupsall-purpose flour (about 1 kilogram, you may need a little more)
  • 4 teaspoonsbaking powder
  • 2 packetsvanilla sugar or 2 teaspoons vanilla extract
  • 1/2 teaspoonbaking soda
  • 1/2 teaspoonsalt

    Beat the butter and sugar together very well.

    Add the eggs one at a time. Then add the milk, orange juice, and orange zest. The mixture may look a bit curdled, but don’t worry—it will come together once you add the flour.

    In a separate bowl, mix all the dry ingredients with half the flour. Gradually add this mixture to the wet ingredients. Add enough flour so the dough is not too stiff, but doesn’t stick to your hands.

    Let the dough rest for 15 minutes. Shape the cookies as you like, and if you want, brush them with egg or milk or your chosen mixture. Bake at 350°F (180°C) for 10 to 20 minutes, depending on their size.

Με λένε Στέλλα και μένω στην Καλαμάτα. Ξεκίνησα το 2004 τις Συνταγές της Παρέας που έγιναν Cookpad.
