I started making this soup for my daughter about 3 years ago due to the fact that she was always wanting to go to olive garden to eat this soup, and I thought that I could make it as good if not better! This soup is amazing! Its Hearty, filling, stick to your ribs kinda good! I like to serve it with a nice chunk of crusty bread, sometimes I melt cheese on top of the bead for a special touch! Its great the first night, but even better the next day or two (if any is left)! Enjoy!

OMG! OMG! We had never had Kale, so I was skeptical, but OMG! I can't follow a recipe for the life of me but I can tell you what I did and what will be different next time. I used Yukon golds so they would hold up better. Using my soup pot, I browned regular ground Italian sausage and added extra fennel seed (toasted) cause we love the flavor. I did my bacon in the oven and drained both meats and placed on paper towels. With whatever drippings remained in my pot I cooked my onion and at last minute added 4 med to lg crushed cloves of garlic. I then deglazed with 1 cp of my homemade chicken stock and slowly added in 4-5 cups of water and chicken bullion. At this point add in crushed red pepper or cayenne. if you don't like it spicy, use just a little because the flavor is elevated 10 times. It's delicious! My mistake was letting then letting the potatoes become fork tender. Nope not next time. I will add potatoes just for a few minutes before everything else next time. I added my meat, kale and whipping cream + 1 1/2 cp half and half ( mainly because it wasn't thickening and partly because at this point I knew I wanted leftovers). I added more kale and a little half & half every time I reheated it. So good!

while I have never followed this recipe, I have been making this soup for years. For a more authentic recipe add a pinch of red pepper flakes.

Thank you for this recipe. Zuppa Tuscana is the only thing worth any effort at Olive Garden. This recipe is very simple to make and the result is great. Only thing I will be improving upon is the amount of meat and potatoes, the other ratios are perfect. Meat is overpowering in texture and it's not like it's healthy and the amount provided in the recipe is unnecessary. I'll try half of the amount next time. For my taste I'll be adding more potatoes . Not to take away from a great recipe, just a personal preference. Thanks! Cook on! :chef

Well, isnt this is weird!?! today I had this soup from a cafe that has awesome homemade soups and ice cream... I said to my aunt I need to make this but make it "my way" which is just about what's listed in this recipe that's posted on here tonight. so I think its meant to be for me to make this soup the way I will like it even better then what I had today.

This has been in our rotation for a little while now. I use two-three sausage spicy.sausage links, two skin on potatoes, A LOT of kale, a lot of parsley and crushed red pepper flakes and a little rosemary and crushed chicken bullion. I also add some shredded carrot. This is how I make it everytime now

this was AMAZING! I added more garlic because in my kitchen you can never have too much garlic.... and I used less water because I wanted a creamier version. SO good! I was planning on sharing with as friend who always makes soup for me......sorry Wendy :( but we just couldn't part with it!

Yes people, this works. I added extra garlic, double kale, a leek and pureed it. just make sure your sausage is of good quality...smoked tastes best. Used extra half and half cream. Cheers. Pretty fail safe...

This is one of the easiest recipes i have ever made! This was so easy to make!I did add an extra cup of heavy cream and added 26 oz of chicken stock instead of 14 oz of chicken broth. I used turkey bacon instead of regular bacon.Also, I recommend trying a squeeze of lemon juice in the bowl right before serving. It compliments the flavors quite well! :chef
