Great recipe!! Although I omitted the bacon and pimentos then I mixed in the mozzarella cheese plus I added one cup of blue cheese...it gives the dip an amazing tang. I then added maybe a third cup or so of additional mozzarella cheese to the top prior to baking. if you wish to brown the cheese on top slightly like I did, flip the broiler on for a couple minutes after baking is complete, but watch that it doesn't burn.
My variation turned out amazing and was a huge hit...nothing left!
If you're familiar with the Springfield Grille's spinach artichoke dip, my variation comes very close to theirs, maybe even better.

I love fresh spinach, so I recommend fresh, probably get a better tasting dip.

I also add 1/4c sour cream, sprinkle of red pepper flakes and small can of water chestnuts, finely chopped. Crockpot on low 1 hr...delicious!

good but EXTREMELY salty cut back on the garlic salt like about a whole bunch. other than that, really good [ok]
