Ingredients

1 kgRipe Plum Tomatoes, cut in half
20 gramsSalt
1 tbspDried Oregano
6 tbspExtra Virgin Olive oil
20Basil Leaves, shredded

Preheat oven to 70°c/160°f

Place tomato halves on baking tray and sprinkle with salt and oregano. Cook in oven for 2-3hrs or until moisture has evaporated. Add olive oil and bake for further hour.

Leave to cool, add basil leaves then serve.
