Sweet and Caramelized Roast Chicken

This is my first recipe and it's not really mine. Was looking for something with honey and brown sugar for a roasting chicken. Found one and added a few ingredients and thought it turned out good. Could probably use a few more spices but my family doesn't like too many, so my hands are tied a bit. Some thyme or rosemary might work nicely. Everyone loved it this way though.

Ingredients

  1. 16 pound roasting chicken
  2. 3 tbspOlive oil
  3. 1/2 cupKetchup
  4. 1 1/2 cupHoney
  5. 1/4 cupBrown sugar
  6. 3Minced garlic cloves
  7. 1 tspOnion salt
  8. 1/2 tspGround mustard
  9. 1 largeonion thinly sliced
  10. 1Salt and pepper to taste

Cooking Instructions

    Unwrap and wash chicken and pat dry. Trim tail end if desired and remove giblets.

    Preheat oven to 375•

    In medium sized bowl mix all the ingredients.

    Rub the bottom of chicken with mixture and put in baking pan. Pour the remaining mixture over chicken and in cavity.

    Lay onion slices on top of chicken and in cavity. Cover wing tips after a while so they don't burn too bad.

    Place in oven and cook 1 1/2 to 2 hours, basting numerous times while cooking. Check with thermometer to 180• in thickest part of chicken. The sauce should caramelize and form a glaze.

    Put the broiler on for a few minutes to make the skin crispy.

    Let rest 10 minutes before carving.

    Add a little flour or corn starch to make a little gravy.
