From what I just read on their website this isn't a low carb pasta. It has 41 grams of carb. That's horrible and not for low carbers.

Maybe read a little more. Out of the 41 grams of pasta, only 8 grams are digestible due to the manufacturing process. so technically it has only 8 grams of carbs.
