As a South Indian man, my wife is tired of me not cooking. So I asked my father in law, what the easiest dish I could make is. And he came up with this!
Cooking Instructions

Put oil in a pan and come to a sizzle.

Add mustard seeds.

Wait till the mustard seeds pop, then add onions and peppers.

When onions brown, throw in carrots, wait a second, and add water.
- 5
Let water come to a boil, then add salt and coconut.
- 6
When water comes back to a boil, add fried cream of wheat.

Throw in curry leaves, stirring all the while.

Adapted from a youtube video with Jacques Pépin. I used a couple of large white ramekins for this, but you can improvise with maybe mason jars or small bowls or something. Jacques doesn't really give the recipe in the video. I figure he uses shallot instead of onion, and I added the frozen peas. A very rich dish, so be prepared.


Ombre Cake
I made this cake for my Mom's birthday but since I had no time to bake the day before, so I just used vanilla cake mix which turned out great. It was soft like cotton. I'm not really into buttercream so I just used whipped cream which was perfectly matched the flavor and the softness of the cake. I also used pastry cream as the filling since I need something more firm than whipped cream to hold such high layered cake. Make sure your pastry cream is quite firm and stiff enough for filling. It takes time to make this kind of cake but once done, you'll be proud of yourself even though you don't make it from scratch.

MOUSSAKA. JON STYLE
Moussaka is a Greek dish made of ground lamb, eggplant, tomatoes, bechamel sauce and cheese.In the classic moussaka, the eggplant is sliced and fried in olive oil. It absorbs a lot of oil. I prefer to breaded and finish baking it, that way the moussaka is more firm and the layers do not slice off when serving hot.

Creamy Mentaiko Omurice
I forgot which restaurant it was where I had the mentaiko omurice, but it was delicious and creamy. So I tried to re-create it...I think it is more delicious if you cook the butter rice with a frying pan. But it was quite a hassle, so I used a rice cooker! It contains some corn in this picture. Etouffee-inspired seafood stew
This was originally going to be a pretty straightforward shrimp etouffee, but our supermarket had a sale on fresh cod and scallops, and I couldn't resist. Despite the change in plan, the actual cooking process remained pretty much the same. The resulting dish was familiar yet different, and pretty darned tasty. A nice change from the usual chowder.
