Oreo Diyas with Lemon Curd

How does Oreo diyas filled with lemon curd sound to you? Diwali, the festival of lights, it jettisons the darkness and marks the victory of good over evil. It is all symbolic of spreading love, joy and ofcourse lighting up the life of everyone you meet. This Diwali, I did light up my house with candles and fairy lights and I decided to light up my dining table as well with earthen lamped shaped food.
My grandson loves chocolate and any dessert and I had Oreo biscuits lying at home. I decided to make Diyas or lamps with the Oreo biscuits and fill them with lemon curd. Used half an almond as the flame and sprinkled some grated coconut on the lemon curd. A delectable dessert indeed.
Trying out new things is what I like to do but making the Diyas with powdered Oreos was a tough task.

Take the Oreo biscuits and with a knife gently lift the cream layer from the centre. Crumble the biscuits with hand or in a blender. I blended both.
With a spoon pour 2 tbsps. Butter, milk and condensed milk on the Oreo powders. Mix nicely until crumbly. Now slowly add a little milk to bind each into a smooth dough. Do not add milk all at once as the Oreo powder is quite pasty. - 2
Once the Oreo dough is ready, take a small ball. Make a smooth ball and shape it into a Diya with your fingers or mould it on a Diya or bowl. After making they keep them in the fridge.
While they set make the lemon curd. You can add anything to fill the Diyas; custard, mascarpone cheese, caramel, cream, jam or any fruit cocktail. - 3
In a small pan, blend sugar, lemon juice, lemon zest, and eggs.
Stirring nonstop with a whisk add the butter and cook over low heat.
Keep stirring until the first bubble appears on the top of the mixture and the curd is thick enough to hold the marks of the whisk, about 6-8 minutes. My pics got distorted :( - 4
To separate the zest from the curd, strain the lemon curd through a fine-mash strainer. Pour the lemon curd into the Oreo Diyas and refrigerate for a couple of hours.
Before serving place an almond half as the wick of the Diya and sprinkle some grated coconut over it. Serve the Oreo Diyas and see the faces light up with joy - 5
Transfer the hot lemon curd to a bowl and cover with a plastic wrap. Refrigerate until cold.
The curd keeps fresh in the refrigerator for about 1 week.
So don’t just light up earthen Diyas but also sweeten everyone’s palate with these melt in mouth edible Diyas.
