First, boil the whole milk with cream until it thickens slightly to make rabdi. Do not make it too thick.

Let it cool, then add the all-purpose flour and mix well until smooth with no lumps.

Heat a griddle and add 2 tablespoons of ghee. Pour about 1 large tablespoon of the batter onto the griddle and spread it thin. Cook on both sides until golden brown.

In a separate pan, combine sugar, water, cardamom, and saffron to make a one-string sugar syrup. Let the syrup cool slightly, then dip the cooked malpua in the syrup for 1 minute. Remove and garnish with poppy seeds and sliced almonds.

Rabdi Malpua is ready. This special dessert is popular in Rajasthan and Madhya Pradesh during Hariyali Amavasya.
