Ingredients

  • 3 cupsmedium coarse semolina (about 480 grams)
  • 1 cupmelted clarified butter (about 230 grams)
  • 1 cuporange blossom water (about 240 ml)
  • 1 tablespoonorange blossom water flavoring
  • 2 tablespoonsall-purpose flour (about 16 grams)
  • 1 tablespoonsugar
  • 1/2 teaspoonsalt
  • For garnish:
  • Honey
  • Oil for frying
  • Filling (optional)

Steps

    Place 3 cups of medium coarse semolina in a large bowl.

    Add 1 cup melted clarified butter, flour, salt, and sugar.

    Rub the mixture well with your hands, then let it rest for 2 hours, or preferably overnight.

    Gradually add orange blossom water to bring the dough together.

    Mix until you get a cohesive dough, but do not knead.

    Shape the dough into a log.

    Sprinkle a little semolina mixed with clarified butter over the log.

    Cut the log into diamond-shaped pieces.

    Fry the pieces in hot oil over medium heat.
