Sweet Hanamame

Hanamame (giant runner beans) are grown around high elevation areas in Japan like where I live in Nagano. Here, they are simmered with sugar to make a sweet snack that goes nice with green tea and often used in making Japanese sweets. I picked some up at a farmers market and this is the recipe that came with the beans. They turn out great!
Japanese recipes tend to be very sweet so adjust the amount to taste. The amount below is what was suggested in the Japanese recipe. I personally prefer them less sweet. #japanese
Sweet Hanamame

Soak the beans in plenty of water overnight.

Drain the soaking water and put the beans in a pot. Pour in plenty of fresh water so the beans are well submerged.

Turn heat on high until the water boils, then turn it to low and simmer the beans gently for 1 hour. If the beans start to poke out of the water, add more so they are covered again.

After 1 hour, turn off the heat and let the beans cool completely in the cooking water (if you remove the beans from the water while still hot, the skin will break!)

After completely cool, strain the cooking water, which will be dark in color, and wash the beans.

Repeat the simmering, cooling, and washing steps another 1 to 2 times until the skin of the beans has softened.

Lastly, add the beans to the pot again with enough fresh water to just cover. Add the salt and sugar and simmer gently until the beans have soaked up the sweetness. Adjust the sugar if you like.

Let cool in the cooking water before storing in the refrigerator.

Enjoy with green tea, bake into sweets like pound cakes, with yogurt, etc.
