Perfect Cucumber Sandwiches

Joanne @JoanneinBath
Thanks Mandy, even though they're probably beyond classic and into cliche, they're delicious!

Do try these. So simple to make, and a perfect speedy, early summer lunch. Thank you, Joanne, wonderful walk together, and a lovely lunch ☀️😎💕😘

Haha, I didn't know cucumber sandwiches were an "English thing".... Funny, they sell these every where in Japan at convenient shops, etc. and I was always wondering were in the world they got the idea from :P

Joanne @JoanneinBath
Really?! That's interesting! You'd never find them being sold pre packed here as you need to eat them fresh, but if you had traditional tea in a hotel you'd probably have them.

Felice @morinoko
I would've never imagined these as a snack for tea!! But, yes, you can find cucumber sandwiches and for some reason egg salad sandwiches everywhere!

These are a favourite for high teas and garden parties, e.g. The Queen's Garden Party, but the worst thing to take on a picnic (soggy bread and warm cucumber is not pleasant) lol 😺

Joanne @JoanneinBath
Absolutely, they need to be eaten as soon as they've been made, definitely not right for picnics. That's why making them with frozen bread and cold butter is good, as everything stays cool. They're nice, but really more of a nostalgic cliche than a gourmet dish, I just thought everyone knew they're were an English/British thing. Interestingly an American study has shown they really do keep you cool: http://www.telegraph.co.uk/foodanddrink/9494932/As-cool-as-a-cucumber-sandwich.html.

The high tea has a fascinating history. It was started by the Duchess of Bedford in 1840, because she used to get the munchies around 4 o'clock. Her afternoon teas soon became a social trend in the country for groups of women, and was the first time women were allowed out by their husbands unescorted. As a result, the high tea was responsible for a major advance in women's rights. 😺

Joanne @JoanneinBath
YEAY!!! 👊🏻 cucumber sandwiches slash weapon of social change and female emancipation? Brilliant. Am making more tomorrow.

Felice @morinoko
So interesting!! Both the cucumber sandwich history and how high tea had such an influence on women's rights (not to mention the Duchess of Bedford's 'munchies' lol)

After 5 years in UK, I still haven't had the pleasure. Maybe I should have a go at them. Keep hearing about them, especially in connection with cricket. I heard they where a traditional snack at cricket games..

Used to make these a lot in High School. Pretty sure I remember learning about them from an Oscar Wilde play.

liz @cook_4758138
Interesting about the Oscar Wilde recollection, Ryan. Thanks for telling us which play , Joanne 👍🏻

sarajones @sarajones7272
Hmm butter interesting! I always thought it was made with cream cheese but I'll have to give this one a try!

Joanne @JoanneinBath
Hi Sarajones, that would be good too, but not the traditional simple cucumber sandwich:)

liz @cook_4758138
Simple and perfect. Made them as a late afternoon 'packed tea' for a friend. I had one too, delicious. Thanks Joanne ☀️😋

@JoanneinBath Lovely recipe, Joanne! Perfect for today's 70th anniversary, aren't they?
