Perfect Cucumber Sandwiches

I know this isn't really a recipe, and probably barely what most people would call lunch, but this English Victorian tea time staple is delicious because of its simplicity. The classic time to eat cucumber sandwiches is the afternoon, with a cup of tea, but we had them for lunch with lime cordial after a beautiful dog walk in the sunny countryside.

Thinly peel the cucumber.

Slice the cucumber thinly, place in a colander or sieve and sprinkle with salt.

Thickly butter the bread, I started off with frozen slices so that I could easily spread it with cold butter, and get it good and thick. By the time I'd finished the sandwiches the bread had defrosted.

Lay the salted cucumber on kitchen paper and pat gently to remove excess water.

Arrange the cucumber on the bread and sprinkle with a little extra salt for crunch, together with a light sprinkling of white pepper, use black if you don't have any but white is traditional.

You're meant to cut the crusts off, and I did this for the photograph, but otherwise I'd leave them on. Serve straight away.
