  • 4eggs
  • 1 tablespoonfinely chopped onions[optional]
  • 1 tsplight soy sauce
  • 3 tablespoongrated mozzarella cheese
  • as neededsalt
  • as neededoil/butter

    Mix eggs, onions, soy sauce and salt in a bowl.

    Beat until well combined.

    Heat oil/ butter in a pan.

    Pour a thin layer of egg mixture into the pan and tilt it until it covers the bottom of the pan completely.

    After the thin layer of egg has set a little, sprinkle some mozzarella cheese and roll it like a log and keep it at one side of the pan.

    Pour another thin layer of egg mixture into the pan, keeping the rolled egg log at one side.

    When the new layer starts to set sprinkle some more mozzarella cheese and roll the log back onto the cooked thin layer of egg and keep it at the other side of the pan.

    Repeat this process until the egg mixture is all used up.

    Garnish with grated mozzarella cheese and mint leaves and serve with any spicy sauce as side.
