  1. 1 slicelow GI brown bread
  2. 125 mlbaby spinach
  3. Cheese
  4. 1egg
  5. 1/2Avocado
  6. 1 tablespoonspoon Jimmysauce
  7. 1 teaspoonoil
  8. 1/2Tomato

Cooking Instructions

  1. 1

    Add the oil to a pan and heat over medium heat. When the oil is hot, crack the egg into the pan and fry.

    While the egg is frying, toast your bread. Place the spinach, avocado, cheese, tomato on the toast and top with the egg.

  3. 3

    Drizzle the sauce over and garnish with fresh parsley and enjoy with tea, coffee or juice.
