Soy Mince Bolognese

I think soy mince is great. In dehydrated form its very good value for money. Its high in protein, really digestible and is ideal for use in stews. If you're looking to cut down on red meat this is a very good option

I think soy mince is great. In dehydrated form its very good value for money. Its high in protein, really digestible and is ideal for use in stews. If you're looking to cut down on red meat this is a very good option
Steps
- 1
Place the soy mince in a bowl of water and leave to hydrate for at least half an hour then drain
- 2
While the soy mince gets ready, chop the onion, garlic and tomatoes (or use tomatoes from a can). Also grate a small carrot
- 3
Heat the butter and oil in a large saucepan on a medium to high heat and throw in the chopped onions
- 4
Once the onions start to dry and take on a yellowish colour, add the garlic, carrots and soy mince. Mix everything together.
- 5
Leave to heat for two minutes then add the chopped tomatoes
- 6
Once the chopped tomatoes start to boil turn down the heat all the way down to the minimum setting
- 7
Add the wine, tomato paste, oregano, laurel leaves, sugar. Add salt and pepper to taste. Stir everything in gently.
- 8
Leave to simmer for about twenty minutes or until the sauce starts drying up. Check every five minutes to make sure. If it gets too dry you can add a bit of water.
- 9
Boil the pasta in some salted water to your liking and serve together. There should be enough for four people. Add grated parmesan cheese for extra flavour!
