Pick a big,round and shiny skinned brinjal to make this recipe. Because this kind of brinjals have less seeds.

Wash the whole brinjal & roast it on open flame. Thats when the skin chars and lends it the smoky flavour.

Turn the brinjal every 1-2min for even roasting. The entire process will take around 8-10min. It needs to cook from inside.

The brinjal will be piping hot once you roast it. Let it cool before peeling.

Cut off the stem after peeling. Mash the brinjal finely like a paste.

Heat 2tbsp oil in a pan. Add chopped onion-garlic & stir it till the raw smell goes away.

Add chopped tomatoes,red chilli powder, dhania powder,green chilli & stir it well till the tomatoes blends well with the masala.

Add the mashed brinjal & salt to taste. Stir fry again for 3-4min.

Serve it hot by garnishing it with chopped coriander leaves.
