Banana oatmeal pancake

Wanted something different from regular pancakes and here I got this. It's very filling and good for those heading towards healthy eating lifestyle.
As the school is resuming, this can serve as a lunch pack for the kids. Just make sure you add enough water for them. This way you are feeding them healthy meal and controlling what they eat outside.
I ate just three pieces and was filled for 6hrs😘😘😘

Wash banana, peel and cut.

Then Combine banana, eggs, oatmeal, cinnamon, baking powder, and salt in the blender to blend until you have a thick batter.

If batter is a bit thin, add in some more oats and if too thick, you can add milk or little qty of water

When you have the desired batter, stir in the chopped groundnuts or walnuts (or other add - in you preferred)

Put 1tbsp coconut oil into a skillet on heat source, spread evenly to coat the whole surface.

Pour in your batter gradually, and when bubbles begin to form, it shows it's ready to be flipped to the other side

Flip and allow the other side cook until golden brown. If the pancake is getting too brown, you can reduce the heat

Do this until the batter is exhausted.

Garnish with your choice of ingredients.

Can be packed in an airtight container when cooled to room temperature and store in the fridge which can last a week and last longer in the freezer.
