This is how it was called by my grand-mother. No, there is no bitter gourd or plantain in this shukto. Shukto is a traditional Bengali dish which is bitter in taste due to bitter gourd added. This is made with bottle gourd or lauki and tastes fantastic. I have used radhuni/wild celery for the flavoring. This is a spice unique in Bengali cuisine. However, if not available methi seeds can be used.

Ingredients

  1. 1 kgbottle gourd peeled and chopped into small cubes
  2. 1 tablespoonyellow mustard
  3. 1 tablespoonblack mustard
  4. 1/2 teaspoonradhuni/methi seeds
  5. 1 pinchturmeric powder
  6. to tasteSalt
  7. 1/2 tablespoonoil

Cooking Instructions

  1. 1

    Soak both kinds of mustard seeds in water.

    Take a pan. To the pan add ½ tablespoon of oil.

  3. 3

    Once the oil is hot add the radhuni/methi seeds. As the seeds start spluttering add the chopped bottle gourd cubes.

    Grind the soaked mustard seeds with some salt. (Blend the mustard seeds with little salt and leave it for some time. Salt removes the bitterness of mustard seeds)

    Add salt according to taste. Remember you also have some added salt to the mustard.

    Cover and keep cooking the bottle gourd till it becomes mushy.

    Now add the mustard paste and a pinch of turmeric and cook until most of the water dries up.

    Serve with rice
