Ingredients

  • 1whole suckling pig (about 26 lbs / 12 kg)
  • 8.8 ozachiote paste for pibil (250 grams)
  • 20bitter oranges, juiced (or substitute with a mix of orange and lime juice)
  • 10bay leaves
  • as neededSalt,

Steps

  1. 1

    Wash the suckling pig thoroughly with orange juice and let it drain.

    Dissolve the achiote paste in the bitter orange juice.

    Rub the pig with salt, then coat it with the achiote and orange juice mixture.

    Let it marinate in the refrigerator for one day.

  5. 5

    Preheat the oven to 350°F (180°C). Roast the pig for 4 hours.

    Serve and enjoy in tacos or sandwiches.
