Crispy and flavorful homemade croquettes, my mom's recipe.
Steps

Boil the potatoes, mash them, and add 2 egg yolks.

Add a mixture of minced garlic and parsley, along with the desalted, shredded cod.

Mix into a dough, then shape into croquettes. Coat first in flour, then in beaten egg, and finally in breadcrumbs.

Heat plenty of oil and fry the croquettes until golden brown on all sides.

Remove and drain on a paper towel.

Serve with aioli for dipping. Delicious!
