Plastic chutney is a sweet chutney prepared from thinly sliced raw papaya. This chutney is not very popular in restaurants but is popular in functions like Bengali weddings and ceremonies. The name comes from the fact that thinly sliced papaya on cooking becomes as transparent as plastic. I do not like the dull colour of the chutney, so I have caramelized the sugar to give it a nice golden colour. The lemon juice adds a tartness to this dessert. The aroma in this chutney comes from the lemon zest added.

  • 1small raw papaya
  • 6 tablespoonsugar
  • 1/4 teaspoonsalt
  • 2 teaspoonlemon juice
  • as neededLemon zest
  • 8-10soaked raisins

    Peel the raw papaya and slice them as thin as possible.

  2. 2

    Take a pan and add the sugar. To it add one tablespoon of water and start heating to caramelize the sugar. Stir it continuously such that the sugar does not burn.

    Once the sugar caramelizes add about 2 cups of water.

  4. 4

    Now add the sliced papaya to the pan.

  5. 5

    Add the salt and cook the papayas. Add more water if necessary.

  6. 6

    Add the soaked raisins.

  7. 7

    Once the papaya is cooked and the desired consistency of the chutney is achieved, turn off the flame.

  8. 8

    Add the lemon juice and lemon zest to the chutney.

  9. 9

    Serve the chutney cold.
