Rajasthani Papad Curry
Steps

Cut papads in desired shape and fry them.

Puree together tomatoes, ginger and green chilies.

Take oil in a wok. Add cumin seeds, turmeric and asafoetida powder and crushed dry fenugreek leaves. Saute for few seconds.

Add the puree and cook until oil oozes out. Add red chilli and garam masala powder.

Once the puree looks cooked add salt.

Add buttermilk and cook by stirring continuously.

Add fried papad pieces, cooker the wok with a lid and cook on low flame for few minutes.

Once done garnish with coriander leaves.

Serve hot with nan, chapatis or steamed rice.
