Ingredients

4 servings
  1. 1 can / /1 cup black beans cooked black beans, rinsed and well-drained
  2. 1 cupcanned corn (drained) or defrosted frozen corn
  3. 1/4 cup Mung Bean Sprouts
  4. 1/2 CupWhite Beans
  5. 1orange, yellow or red bell pepper, chopped
  6. 1 cupquartered cherry tomatoes
  7. 1 cupchopped red onion (from small onion)
  8. 1/2 cupfinely chopped fresh cilantro (about ½ medium bunch)
  9. 1 / 1 tbspjalapeno, finely chopped finely chopped pickled jalapeno
  10. 1/2 teaspoonlime zest (from 1 lime, preferably organic)
  11. 2 tablespoonslime juice
  12. 1/2 teaspoonchilli powder
  13. 1/2 teaspoonground cumin
  14. 1/2 teaspoonsalt, to taste

Steps

10 minutes
  1. 1

    In a large serving bowl, combine all of the ingredients and toss to combine.

  2. 2

    Taste, and adjust the seasoning or beans until the flavors really pops up.

  3. 3

    Cover for an hour to enhance the flavors.

  4. 4

    Leftover can be kept until 3-4 days. Just squeeze an extra squeeze of lime juice.
