Grilled Mexican Chicken Low Carb

I eat a lot of low carb meals and needed something different than just grilled chicken and came up with this. Hubby loved it so much he went to the store the next day for more guac fixings and we had it 2 more times that week. Real easy to do. Buy some of your favorite restaurant or store bought queso. Just season your chicken. Make your guacamole. Grill chicken. Top with guac. Drizzle with queso. The key is seasoning your chicken and making fresh guac. Don't use store bought guac or really old spices. Fresh ingredients make all the difference. I like heat so I use a number of good, quality chili spices for the chicken and add jalapeno to my guac. My spices came from an amazing spice shop out of California called Spice Ace. They did online orders but sadly closed shop up late winter of 2019 due to a serious medical crisis. They had an amazing going out of business sale and so I bought a bunch of my favorite spices from them and what I'm not currently using or "overstock" I vacuum sealed in bags and store it in a cool, dry place.

Ingredients

  • 2Boneless chicken breast
  • Fresh made Guac
  • Queso
  • Cumin
  • New Mexico Hatch Chili Powder
  • Mexican Oregano
  • New Mexico Chipotle Chili Powder
  • New Mexico Hatch Chili Powder
  • Garlic Powder
  • Smoked Salt
  • Smoked Pepper

Steps

  1. 1

    Season chicken an hour before grilling, wrap in plastic wrap and refrigerate until ready to grill.

  2. 2

    Make guac right after seasoning chicken and were so guac can meld.

  3. 3

    Grill chicken, top with guac, drizzle with queso. I served mine with seasoned and pan "fried" zucchini coins.

I actually am not terribly fond of cooking, (I know, right? Wrong place here) but love to eat new things that aren't processed and like to try my spin on recipes or cook off the cuff. I do some full fat cooking and low carb cooking but the cooler months I love to make sweets! My husband truly enjoys my cooking but hates when I make something the first time and off the cuff but never write it down and the second time it's never as good so hopefully using cookpad will help.PS- Not here to hook-up and trust me, you can't catfish me.
