Vegetable Kadhi

Steps

Grate Ginger. Chop Garlic and Green Chilli. Slice Onion. Dice Potato into small pieces. Slice Cauliflower Florets.

In a pot add put oil and once it gets heated add Jeera. When Jeera starts changing colour add grated Ginger, chopped Garlic & Green Chilli and sliced onion, Diced Potato, Sliced Cauliflower. Add spices and saute well.

The vegetable are getting cooked. Meanwhile, in a mixing bowl add little amount of Buttermilk. Into it add Besan and mix it well to make a paste. Slowly add remaining Buttermilk to avoid lumps.

Add this Besan Batter in the vegetables getting cooked. And stir the mixture avoiding it stick at the bottom. Bring it to boil. Kadhi is ready once it gets thicken.

Your Kadhi is ready. Garnish it with Coriander. Can be served with Steamed Rice or wheat Chapati or the Nutricious Roti(recipe posted earlier). I served it with my Nutricious Roti and Steamed Roti. Enjoy your meal!
