This is a really rich dish which we enjoy. The beef is lovely and soft and the sauce is rich and glossy and strong in flavour. You can mix through fresh veg and coriander at the end to help freshen it up.

In a small bowl mix together the soy, spices, ginger and garlic.

Cover the base of your slow cooker with the tinned tomatoes.

Put the beef in and rub your soy and spice mix all over the meat. Pour it all in, the excess simply runs into the tomatoes on the base.

Cook on low for 8-10 hours.

Once cooked and the beef is tender, use two forks to shred the beef apart. Pull out any flabby bits of fat that you come across.

Stir in your coconut milk and spinach leaves and serve with rice or noodles.
