Don't peel the bitter gourd skin too much. Wash nicely and cut into thin round slices. Few people will take the seed off but you don't want to do this for this recipe. Wash nicely and let it dry in cloth for 30 minutes.

In wide bowl add rice flour, roasted gram flour, cornflour, turmeric, chilli powder, salt and mix it. After 30 minutes take the dried bitter gourd and mix with the flour by sprinkling little bit of water. Don't add too much of water you should add just the flour should coat over the bitter gourd nicely..

In pan add enough gingelly oil. When you are ready to fry the bitter gourd add sugar and mix one more time. Now shallow fry the bitter gourd both sides.

Once done sprinkle the pepper powder and serve hot. It taste very crispy and you can't find the bitter taste in the crisps. you can prepare this as a snack also...
