Ingredients

  1. 10dried red chiles (such as guajillo or New Mexico chiles)
  2. 1/4onion
  3. 2 clovesgarlic
  4. as neededcorn tortillas
  5. chopped onion, to taste
  6. shredded cheese, to taste
  7. chicken bouillon powder, to taste
  8. as neededoil

Cooking Instructions

  1. 1

    Boil the chiles with the two garlic cloves and the quarter onion. Once softened, blend everything together and cook the sauce, seasoning with chicken bouillon powder.

    Start heating the tortillas in a little oil. Have the chopped onion and shredded cheese ready.

  3. 3

    Once the tortillas are heated, dip each one in the chile sauce, then fill with onion and cheese. Repeat the process, stacking them as you go.

    I served them with refried beans. Enjoy! 😋😋
