Super easy and one of my favorite dishes. By the way, this is how we make them in my home state of Chihuahua, for anyone who might comment otherwise. 😋

Super easy and one of my favorite dishes. By the way, this is how we make them in my home state of Chihuahua, for anyone who might comment otherwise. 😋
Cooking Instructions

Boil the chiles with the two garlic cloves and the quarter onion. Once softened, blend everything together and cook the sauce, seasoning with chicken bouillon powder.

Start heating the tortillas in a little oil. Have the chopped onion and shredded cheese ready.

Once the tortillas are heated, dip each one in the chile sauce, then fill with onion and cheese. Repeat the process, stacking them as you go.

I served them with refried beans. Enjoy! 😋😋

When we make enchiladas we can't decide which ones we like better Beef or Chicken. So we usually make both but if you just want one or the other than double up on the beef or the chicken and take out the other meat for this recipe. Adrianne Meszaros -
