Mustard greens are filled with nutrients and vitamins ,specifically vitamin A and K. Just one cup of cooked mustard greens will provide you with 96% of you DV of vitamin A and 690% of your DV of vitamin K (wow!)
Vitamin K support bone health and blood clotting, while vitamin A is essential for vision health, white blood cell function and production, fetal development during pregnancy, healthy cell division specifically in skin, lungs and intestines, among many other health benefits.
Although raw mustard greens have a tough texture and spicy flavor, cooking them softens them up and removes their pungent taste.

Assemble all ingredients.

In a heavy bottom pan, add 3 tbsp of oil. Add diced red peppers and cook covered until they have soften (4-5 minutes). Mix occasionally.

Add 1lb of mustard greens and season with salt, pepper, smoked paprika and hing. Cover and let mustard greens cook in its own juices until it has reduced in size and they are cooked (7-9 minutes). Add butter and cook for another 2 minutes.

Serve warm. Yum!
