This is a simple start for sourdough that my wife's mother gave to her. We use it for sourdough bread and pancakes, among other things.

In a mason jar or other container, combine equal parts flour and spring water. Stir well to ensure they are evenly mixed. Cover loosely with clean kitchen cloth and let sit on kitchen counter for 2 to 3 days, or until a good amount of bubbles start to appear. Cover jar with lid and transfer to refrigerator if not immediately using.

To use and feed your starter; take out the amount needed for your recipe and replace equal parts flour and spring water, being sure to stir again. If the starter is kept at room temperature, it needs to be fed every day and weekly if in the fridge.
