We all want quick and easy meals on a school night. Here's one I prepared in 5 minutes, popped in the oven, walked the dog around the park and dinner was ready when we got back. Perfect and very little washing up!

We all want quick and easy meals on a school night. Here's one I prepared in 5 minutes, popped in the oven, walked the dog around the park and dinner was ready when we got back. Perfect and very little washing up!

Ingredients

40 mins on 190 mins
4 servings
  1. Packchicken wings
  2. 1red onion
  3. 1red pepper
  4. 5medium potatoes
  5. Spice mix of your choice, I used cumin, paprika and coriander
  6. Salt and pepper
  7. Olive oil

Cooking Instructions

40 mins on 190 mins
  1. 1

    Coat the wings with the spice mix.

  2. 2

    Peel and slice potatoes to 1cm thickness

  3. 3

    In a roasting pan, add the potatoes and your veggies. Brush with olive oil

  4. 4

    Top the veggies with the wings in the pan

  5. 5

    Roast for 40 mins.

Love good food and I discovered quite early on in life that the easiest way to eat well for less was to make it myself. I work full time during the day and have a family and dog to juggle too. Most of my meals are quick, easy to make and always using fresh ingredients. I cook all regions of food but my roots are Cantonese so the style features in many of my Asian dishes. I do a lot of fusion food too. Occasionally I'll indulge in the occasional posh instant noodles from Korea or Japan.
