Loaded nachos
Poor man taco night.... i make this often , everyone in my house love tacos / nachos... I make this around the same time I make a big bowl of salad... and use some of the lettuce and tomatoes from that, I do have some picky eaters so grabbing a few extra things like a cucumber , mushrooms (when iam grocery shopping is no big deal.)for a salad. To do a pasta Night with salad .... that way all of my lettuce and tomatoes are being used up and I have no waste and two dinners.... it’s just something I always do if I make something like this or tacos ... ( this happens to be a favorite of mine , quick easy and cheap)

Wanted to make this for a while now. So glad I did. The potatoes some will crisp more in the oven some won't. The 4 servings are for complete meal servings. The 8 is for a side serving. Can be served for breakfast lunch and dinner.

The nachos I had in America were so delicious that I fell in love with them.When I had guests coming over, I made a double batch and they were gobbled up in a flash.You can use any cheese such as cheddar, Gruyere, Swiss, Parmesan, etc.You can replace the tomato sauce with chili or Tabasco.
