Hope everyone is staying safe with this craziness going on in the world. I decided to make a whole chicken today, that I can then use leftovers for 1 more meal tomorrow. We had an abundance of oranges in the fridge, so curiosity took over and this masterpiece was made♡

Orange Glazed Whole Chicken

Hope everyone is staying safe with this craziness going on in the world. I decided to make a whole chicken today, that I can then use leftovers for 1 more meal tomorrow. We had an abundance of oranges in the fridge, so curiosity took over and this masterpiece was made♡

Ingredients

  1. 1whole chicken, washed, patted dry
  2. 1 tbsolive oil
  3. to tasteSalt and pepper,
  4. Glaze
  5. 2 tbswhole grain dijon mustard (or the smooth kind works)
  6. 1heaping tbs orange marmalade
  7. 1.5 tbsbalsamic vinegar
  8. 1 tspgrated fresh ginger
  9. 1 tbsolive oil
  10. Zest of 1 orange
  11. Juice of 3 medium oranges (I used 4 mandarins)
  12. 2 tspwater
  13. to tasteSalt and pepper

Cooking Instructions

    Set oven to 375°F.

  2. 2

    Wash, pat dry, rub down with olive oil then sprinkle salt and pepper on the chicken. Set the chicken on a baking dish.

    Mix all ingredients for the glaze

  4. 4

    Place one half of the oranges used into the chicken cavity.

  5. 5

    Pour half the sauce on the chicken and bake for 45 min

  6. 6

    After 45 min, pour remaining sauce on the chicken.

  7. 7

    Glaze the chicken with the sauce every 25 min or so until chicken is cooked and juice runs clear. About 1hr 40 min for 2.5 lbs chicken

    Serve with rice and steamed veg
