Rice Vermicilli Payasam

In Sanskrit, Payasam means rice cooked in milk. We invariably make payasam for celebrations. I used rice vermicelli (rice seva), milk, coconut milk, and palm sugar cubes. Over medium heat roasted vermicelli in butter for a minute Then Vermicelli was soaked in boiling milk for 10 minutes in a bowl. The thin vermicelli gets almost cooked during soaking. I used medium low heat for making the payasam. In a heavy saucepan I roasted cashew nuts and raisins. Transferred the vermicelli from the bowl to the saucepan, added milk, cooked for a few minutes, sweetened with sugar, added saffron, mixed together, added cardamom, and nutmeg. Simmered the heat added coconut milk. After a couple of minutes turned the heat off. Delcious payasam was ready. #healthynavratri #goldenapron3

Make a checklist, collect required ingredients, and keep them within your reach

In a saucepan over medium heat roast vermicelli in a tbsp melted butter. Transfer to a bowl, add 2c of boiling milk. Keep covered-about 10 minutes
Over medium heat roast raisins and cashews in a tbsp butter in a saucepan-about 2 minutes. Remove them and keep aside to garnish later. Transfer the soaked vermicelli to the saucepan, add 2c milk. Let vermicelli cook for 5 minutes. Stir in sugar. Dissolve saffron a in a tsp of hot water. Stir in saffron to give a nice colour to the payasam - 3
Add cardamom, ground cinnamon and nutmeg, stir, lower the heat, stir in coconut milk, and continue cooking for 5 minutes. Turn off the heat. Garnish with cashews, pistachio and raisins.
