  • 150 gsugar
  • 225 gmagarine
  • 2 tspvanilla essence
  • 100 gself-rising flour
  • 125 gsweet potato flour
  • 1 tspbaking powder
  • 1 cupmilk
  • 4eggs

    Sift dry ingredients. Set aside

  2. 2

    Prepare baking tin either line the bottom with parchment paper, grease the sides with magarine and dust with flour. Or if you don't have parchment paper, worry not. Grease the bottom and sides with margarine and dust with flour

  3. 3

    Cream the magarine and sugar and till the color changes from bright yellow to pale yellow

  4. 4

    Add the eggs one at a time, and vanilla essence. Mix until mixture is frothy. I break my eggs separately in a bowl, one at a time, to avoid using a spoilt one.

    Pour dry ingredients to wet ingredients and mix well. Add milk slowly while mixing,to incorporate it well.

  6. 6

    Pour into prepared baking tin, bake for 60 minutesat 170 degrees. I don't like my oven too hot in the onset, so I preheat for 3-5 minutes

  7. 7

    If baking cupcakes, bake for 30minutes.

i might try this recipe but with a few substitutes. my diet is gluten free , sugar free and dairy free so i use a combo of azuri sweet potato flour, oat flour and corn starch. i use oat milk instead of the dairy milk.
