Take half the sugar in a bowl and add the egg white to it. Beat it thoroughly. Add the remaining sugar in the bowl.

Keep beating until the mix achieves a creamy consistency.

Now add in the lemon juice extract. Mix thoroughly. If you have not achieved your desired consistency add in some sugar to make it thicker or a few drops of water to make the icing thinner.

Decorate your cookies or any other confectionery as you like.
