I use this recipe as a base for many pasta recipes - it’s pretty versatile and easy to upscale with vegetarian or meat options.
Steps

Chop vegetables small (diced)
- 2
Heat olive oil in a pan and add chopped garlic. After one minute add the rest of the vegetables and stir. Cook on a low heat for 20 minutes- the carrot, onion and celery will soften.

Add 1 teaspoon cumin powder and stir.

Add tin tomatoes, tomato paste and stock. Stir and simmer for 30 minutes.

(Optional) you can add mushrooms, fish or meatballs and simmer until cooked through.

Serve with pasta and parmesan.
