High-protein pea, spinach & walnut pesto pasta

This is a fresh, creamy and satisfying pasta dish that feels indulgent but is still fairly well balanced. The homemade walnut pesto gives it much more flavour than a jarred pesto, while the peas, spinach and cottage cheese add fibre, vegetables and extra protein.

Per portion, roughly:

* Calories: 650–750 kcal
* Protein: 30–35g
* Carbohydrates: 65–75g
* Fat: 25–30g
* Fibre: around 8–10g

Ingredients

  • 1 pinchSalt
  • to taste Extra lemon juice
  • 75–100ml Reserved pasta water
  • 25 gParmesan, finely grated
  • 100 gCottage cheese
  • 100 gBaby spinach
  • 170 gFrozen peas
  • 200 gHigh-protein pasta
  • plenty Black pepper
  • 40 gWalnuts
  • 1–2 tbsp Cold water
  • 3 tbspExtra virgin olive oil
  • 1 tbspLemon juice
  • from ½ lemon Lemon zest
  • 20 gFresh basil
  • 1Small garlic clove
  • 25 gParmesan, finely grated

    Toast walnuts in a dry pan for 3–4 min over medium heat until fragrant. Cool slightly.

  2. 2

    Blend walnuts, Parmesan, garlic, basil, lemon zest, lemon juice, and olive oil until textured but fairly smooth. Add cold water to loosen. Season with salt and black pepper.

    Cook pasta in salted water as per packet instructions.

  4. 4

    Add peas for the last 3 min of cooking. Reserve about 100ml pasta water before draining.

  5. 5

    Blend cottage cheese with two-thirds of the walnut pesto and a splash of pasta water for a creamy sauce.

  6. 6

    Drain pasta and peas, return to pan. Add spinach and stir over low heat for 1–2 min until wilted.

  7. 7

    Remove from heat, stir in cottage-cheese pesto mixture and remaining Parmesan.

  8. 8

    Add enough pasta water to make the sauce silky and glossy.

  9. 9

    Divide into two bowls, spoon remaining walnut pesto on top.

  10. 10

    Finish with black pepper, a squeeze of lemon, and extra toasted walnuts if desired.
