Vegetable Kadi (Sindhi special)

Cut and wash all the vegetables in big size

Slit the ladies finger and deep fry them

In a deep pan or in a cooker add oil when it becomes hot add Fenugreek seeds mustard seeds cumin seeds asafoetida when it crackles slow the flame add besan or gram flour and roast it on the slow flame till darkish golden in colour constantly stir it like you roast for halwa

It will give nice aroma of roasting at that time add the water 4 to 5 glasses

Stir occasionally when it comes to boil add salt turmeric powder and red chilli powder give a nice boil add ginger green chillies chopped and curry leaves add all the vegetables except lady fingers

Don't cover the lid let it simmer until 80 % of vegetables get cooked and tender now add lady fingers and tamrind paste or Kokum let it simmer for 10 to 15 minutes on low flame kadi will leave it's colour and oil take it off serve it with rice accomplish with fried potatoes papard and sweet boondi

Try this I hope you all will enjoy it with hot rice bit spicy and Tangy gives yummy taste potatoes 2 big and other vegetables 20 -25 gm each will be enough there should be nice gravy too
